Combine the pineapple chunks, pineapple juice, and light coconut cream in a blender or food processor. Blend on high until fully blended. (You can also add the ingredients straight to the Ninja Creami pint container and use an immersion blender.)
Pour into the Ninja Creami pint container, put the lid on, and freeze for 24 hours.
Remove from the freezer and place the pint container in the outer bowl. Attach the outer bowl lid and place in the machine. Press Sorbet (or Lite Ice Cream). After the first spin it will likely still look crumbly.
Re-spin two more times. If the sorbet still looks too crumbly after the first re-spin, add a tiny splash of milk (about a teaspoon) before the final re-spin.
